Fair Food Fight Recipe: Strawberry Granita

Strawberries are with us for so short a time, I try to build recipes around them as much as I can. This weekend is going to be a big strawberry weekend at the market for me, I can just feel it.

And Strawberry Granita is SUCH an easy and delicious Italian iced desert. Chilly and sweet on a humid summer day. I think you crop mob kids should consider making some after a hot day’s work!

STRAWBERRY GRANITA

 

2 c. strawberries – chopped

2–4 T. agave syrup OR honey

1 c. ice cubes

 

Optional add-ins:

1 tsp. mint OR basil OR cilantro

1 tsp. almond extract

1-2 T. fruity liqueur

 

 

  1. Combine all ingredients in a blender. Puree until smooth.
  2. Pour mixture into a 9×13 metal pan and freeze for 1 hour, stirring once or twice. The finished texture should be a firm slush.
  3. Serve in chilled dessert dishes or wine glasses.

 

Nutrition Tip: Strawberries are an excellent source of vitamin C, an antioxidant that helps prevent cataracts.

    Oh, it’s a mind-blower. Strike a deal with a local strawberry farmer and MAKE LOTS.
